Because I can install a custom operating system, in which I will have root, at any time and with zero resistance. I don’t, because I don’t really want to take chances with my only means of calling for help in an emergency, but there’s nothing stopping me if I’m feeling brave.

You, on the other hand, have to exploit a security vulnerability in your own phone in order to use it outside the ridiculously strict bounds Apple imposes, and there aren’t even any custom operating systems to install.

Also, I can install a real browser with real ad blocking, and I don’t even need root or a custom operating system to do that.

Android phones are far from perfect, but Apple phones are outright unfit for their purpose.
